FROM SEED TO PLATE

The project was born in 2017 on the initiative of the Ulisse Training Agency, thanks to the contribution of the CON IL SUD Foundation, as part of the 'Immigration 2017' initiative. The goal is to train young people from different parts of the world by integrating them into the world of cooking in general and street food specifically. The 'Food Truck' project starts from the assumption that

“Street food is the most direct way to learn about the history of a country, all over the world ››. The quote, by Gualtiero Marchesi, thus defines a phenomenon with very ancient origins and in constant growth: from markets, to fairs, to sector events and, above all, along the roads, the art of knowing how to reinvent the typical dishes of one's region is becoming more and more sought after and appreciated.

In the spring of 2019 the first two food trucks 'Cime di Rapa' - with six of the best students from India, Bangladesh, Pakistan, Ivory Coast, Senegal, Morocco on board - start to turn around the Apulian squares for events and events, offering traditional Apulian dishes (orecchiette with turnip tops, puccia with pieces of horse, with meatballs, sausage and chicory and much more).

Meltemi Vacanze, a hotel and restaurant management company, is called to manage the initiative, which takes care of the recruitment and placement of young people even in its own tourist facilities. The constant collaboration with the Ulysses Cooking School, in terms of continuous staff training, but also of collaboration with chefs of national importance and various experts in the sector (agronomists, biologists, chemists ...) allowed the initial 'Food Truck' project to grow and evolve towards what today is the 'Cime di Rapa' brand. That is a new idea of ​​catering that seeks to combine traditional cuisine with fast, unconventional service.
